So the question still remains whether good 8K 48gb HMDI 2.1 cables can get the job done... I'm not seeing that info anywhere... but guessing the answer is "yes".

Going down the rabbit hole, I found the PS5 does not support DSC and the HDMI 2.1 port only supports 32Gbps bandwidth, so that's why its VRR maxes out at 4k@120Hz. So given that example, both the source and monitor have to support DSC for it to work, so now there's a new "yes, but" when it comes to saying if a cable can do a certain resolution + refresh rate.
