Really good deal. 7900XT is about 15-20% faster than the 4070 ti Super at rasterization (obviously about 20%slower in raytracing) while being about 10-15% more affordable.
If you can afford it, awesome for you!

But I assume you're referring to minimum wage workers who have no kids/other responsibilities, no rent expenses, no bills, no food requirements, no savings to set aside for rainy days, no retirement investments, no college savings to pay into or debt to pay off, no income tax withheld, etc., etc., etc. (Essentially a 14yo working at Chick-fil-A while living with their middle-class parents.) Yeah, if they didn't have all that and more to consider, then you're right—even they could make up the difference in less than a month.
7900XTX at $700 will make it pretty tempting over RTX options.

Would you recommend the 7900xt over the 4070 ti Super if I used it for PCVR gaming? Maybe like 30% VR and the rest 1440p

7900XT is absolutely a great choice. I would take it over the 4070 TI Super anyday.

Check your credit card. Some will add an extra one-or-more years of warranty up to a combined max of 3, 4, or 5 (depending on the card). My Chase Freedom card does that.

Have this card in my system for about a year its running great so far runs anything really and if yoiu want you can always use fluid motion too just be aware this card is big so make sure it fits on your system lol its Max GPU Length 330 mm think almost 13 inches long you guys got it good I bought for 800 dollars at the time lol

Question for the PC gamers out there. I know the GPU is the major cost in a build. If one were to buy a 7900XT, what kind of cost would one be looking at for the remainder of a system? Id imagine that depends on the quality of parts so let's say parts that match the 7900XT rather than bargain bin crap. Disregard a monitor as well.

If you have a microcenter nearby, 7600x cpu w MB and 32gb ram $300, Nvme drive $100, case and PSU $150, +$50 for fans/cooler to make things run better which is optional

Thank you! That helps me tremendously in having a better idea of what I'd need to spend for a rig I'd be down for. Ive been debating it for awhile because I know that long-term, I could build a rig that would outlast consoles with better graphics and cheaper games. Its a hard choice because I'm wrapped up something hardcore in the Sony ecosystem but if I could build a good rig for around $1200-1500, I think it's something I should be exploring.

Def worth going for a bundle like previous poster said. You could save maybe $100 by going with AM4, but not really worth it imo. If you follow slickdeals and pc part picker on reddit, a lot of good deals pop up on stuff. There have been some great deals on Power Supplies lately and SSDs appear to finally be coming down. Just saw a 2TB drive for $85.
