Decided to buy this.

There's no advertised probe read time, but I compared it to another 3 second probe I had and it's faster, close to 1 second. Screen lacks a decimal so you'll only read whole degrees, but accuracy seems to be comparable to other thermometers (within 1 degree, tested in Celsius).

As for the IR, readings are below 2 seconds, and the IR button can be held for constant sampling. However, compared to a TIF 7610, this reads about 3 degrees Celsius lower.

Overall not bad at this price, especially considering it replaces 2 tools and can live with my griddle
