Would the Wiim Amp Multiroom do the job? I would be a newbie at using a network, multiroom receiver but my understanding is i would need one multi room receiver and an amp for each zone of speakers. Is that right?

Yes. You plug in the output to the receiver and let the receiver do its job.

Your receiver supports 2 zones. Maybe you could get audio to 4 areas with some sort of splitter\speaker selector, but you wouldn't have much independent control over those areas.
Using this WiiM receiver\streamer would give you independent control of each area it's connected, it just wouldn't be integrated with your current receiver. Note that this is meant to be used with an amp\powered speakers.
I got this for ~$95 Dec 2023 from Rockville Audio, not sure if the coupon was a pricing error or not and if that price can be expected this year. It's a great little piece of equipment, never really have an issue with it. It auto changes input sources (AirPlay, line in, BT, optical) on its own pretty seamlessly and I rarely ever have to use the app
what is this device even for?..... is it like an expensive onn. walmart box?
This is for audio streaming. The nicest thing about an audio streaming box is the ability to play audio to multiple audio boxes at once letting you play music across the whole house. Most video streaming Ive seen doesn't support that feature

interesting. is there any reason to prefer this over wifi speakers that are spread about the house?

Maybe or maybe not. Depends if the wifi speakers have chromecast audio or airplay capabilities. If so then this is much less useful. If the speakers lack the features, this will give the smart features it needs. Also to the commenter above, hifi could also be a factor

I think a couple of the other posters are confused. You want to use the heos system, so your AVR can manage the zones and the heos amps in each room would produce the sound, right? If so, I don't think this will work, unless one of its features is to integrate with the heos system, which it doesn't say anywhere, and probably it's Denon's proprietary system anyway.
Also, this is not an amp, so it needs to be connected to an amp or to amplified speakers. You can do multiroom without the AVR though, if you have amplified speakers in each room, and using one of these in each room and the Chromecast protocol. I don't know much about Airplay but I'd be surprised if it didn't do multiroom as well.
