Typically one hand frets and/or controls a slide (usually left hand). The other hand picks or plucks the string (usually right hand).
You could tap it at the frets with one hand, or you could play open notes with one hand near the bridge. You could fret with one hand and then use any other appendage to pluck the string (toe, drum stick ducktaped to arm, tongue, dong, etc.).
But as a multi-instrumentalist, I'd highly recommend looking into a sythesizer. You can do a lot of playing and sequencing with one hand, and once you sequence a little melody, you can do a lot of manipulation of it with one hand to shape the sound. The Minilogue XD is a very nice beginner synth that a pro would still enjoy. The simpler looking synths are often actually more difficult to use, and the ones with lots of knobs are often simpler.
