The one I got earlier this year came with a manual hood, but no soft cover, which I bought separately.
A hinged hood would be nice for convenience, but not required, but a soft cover is definitely required.
Also, the 15k BTU is not enough heat. I had to buy a variable regulator from Amazon (like $15), to bump the heat to about 45k BTU. I found that at 15k BTU it was unusable. The new regulator took about 5 mins to install.
If I could to it all over again, I'd probably get the Costco Blackstone for $450 right now, since it already includes a hinged hood, soft cover and 60k BTU.
Note: 45k BTU works perfect for me and my burgers and doubt I need more than that.

Some people have upgraded the burners too, but having upgraded to a variable regulator has made a world of difference.

Any of the grills Ive messed with over the past couple years have a similar 'issue/feature/safety stop' in place.
The fix is as you mentioned: Close, remove, (I wait like 30 seconds here) , reattach and then open up the gas canister. In my experience this fixes the issue and its back to grilling/griddl'n again.
I wish my Sams has the Pro on the floor so I could get it at a discount while they want to get more room for Christmas decorations, but sadly they only have the one without a cover in club.

Trying to cover this up with just a soft cover and the plastic thingy that props the soft cover up is absolutely a pain and doesn't work well.
Get. A. Hard. Cover.
