if it helps, the PPI of a 1080p 16" monitor (137 PPI) is actually HIGHER than a 1440p 27" monitor (109 PPI). Additionally, you'll get more FPS and higher settings at 1080p then you would at 1440p.

You do realize that some people might plug in an external monitor and play on that with a higher resolution, right? Sure it might be overkill if you'll only play on the built-in screen, but I've also never in my life heard someone say "damn my video card is too fast!" Also, they might want it for powering a VR headset.

They can charge customers its only $20 difference (Crucial on amazon). Making a customer go through that hastle + possibility of damaging the laptop.
