If you want a quick action where you want to mainly focus on the fighting where the fights are a lot quicker - Monster Hunter Rise (MHR).
If you want a realistic - slow paced tracking - and heavy/story filled game - Monster Hunter Worlds (MHW).
They both play similarly in action because they are both Monster Hunter games, but I think if if you want a challenge/polishing of skills - Monster Hunter Worlds does seem a little bit harder since you dont have all the wire bug tools nor a mount in game like you would in Monster Hunter Rise.
If you ware looking to get into the newest one that is coming out with the whole open world concept - I would say go with Monster Hunter Worlds to polish your skills and get used to some mechanics/strategies.
I won't say it's everyone's cup of tea. It's quite difficult -- weapons have a shocking amount of depth and complexity to them, many of them with high-commitment, high-follow-through moves so you really have to get to know the monsters you're fighting in order to best them. Some of these struggles against these monsters can last a full ten minutes when you're equipped 'properly' to fight them (much shorter if you're overequipped, and much longer if you're totally unprepared).
But between the excellent monster designs, the intricacy of the weapon movesets, and the addictive gameplay loop of fight -> get resources -> craft gear -> fight, for those that can work through the initial difficulty curve, it's an incredible game, one that will easily engage you for over a hundred hours.
