However, they come with the Intel 14th gen CPUs. Some people may want to avoid them even though they are the non-K series and Intel has pushed the microcode update.

In the past I would recommended NUCs without hesitation (they keep firmware/drivers up-to-date, provide 3-year warranty with very good support), especially if you don't care about Intel/AMD. Since they are taken over by ASUS, I can no longer make that recommendation, because ASUS is... ASUS.
There are many small PCs in the NUC form factor on Amazon, mostly from Chinese brands. Do your research, but don't expect products similar to those from Intel/Lenovo/Apple. That said, I have a Minisforum machine that has been working fine for me (after one replacement)
Now, if you are ok with Mac OS and can wait, keep an eye out for the M4 Mac Mini that probably will be released next week. With the rumors that they start with 16GB RAM, it could be a very viable option. Of course, not if you want the ability to upgrade/replace parts.
