I used online chat to cancel my line within 3 days, took a 10 minute conversation but they refunded everything no problem. I have heard however that if you do this repeatedly AT&T will eventually blacklist you.

What kind of reason did you get when cancelling it? I just said AT&T has poor signal at my house. They didn't push very hard.

If you get the phone from Total keep in mind it will be locked for 60 days.

Oh okay gotcha and would I need to call them directly to unlock it after that or would it automatically unlock?

If you look at one of the Total deals (such as this one which I got myself: https://slickdeals.net/f/17786598-total-wireless-motorola-edge-2024-5g-smartphone-30-day-total-5g-prepaid-plan-65-new-customers-w-port-in-id-verification), it says they will unlock automatically after 60 days. However, I have not had the phone long enough to confirm that.
