Can anyone recommend a ketchup that pairs well with this?

They are not being serious. It's the same comments every time wagyu gets posted.

what does one actually do with 11lb of A5. I can barely eat more than 2 or 3oz at a time.

lol , when the Fed speaks about the consumer being strong and resilient during inflation they meant the consumer buying this.

Sous vide chuck roast. Thank me later.
We do them all the time Sous Vide, 135 for 8-24 hours and then finish over hot charcoal or wood, amazing for the $$. 6$/lb from WildFork for nice Chuck's which usually have the chuck eye section on them.

I love Wagyu, but in small portions. I can't imaging dropping $800 for 11 lbs of it when I can find nicely marbled NY Strip for 1/10 the price. Maybe that's just me being poor and cheap Smilie

How long can this be stored in the freezer if it's vacuum sealed?
Quite a while - because there's so much intramuscular fat, you're not losing a lot of moisture in the meat.

Buy it with a couple friends and split it up.

Cut it into smaller portions and freeze the rest in individual portions.
The best way to cook these is teppanyaki / griddle. If cooked on a grill it produces too much drippings and flare ups.
