I dunno anything about these binoculars in particular, but if you've never had a pair and are looking to get some, 8x21 (or even 7 or 6.5x20something) is a nice place to start. As lenses get bigger, their depth of field gets shallower and they get harder to hold steady. Shallow depth of field and shaky lenses both make it harder to find what you're looking for. Smaller binoculars are also easier to justify carrying with you on a whim, so you'll end up using them more.

On the other hand, big lenses gather more light, which makes them more useful in marginal conditions. And higher magnification…well, that's the whole point, right? But there are advantages to starting small.
