Not an expert, but you'd be picking up a heavier knife(one of my only complaints about victorinox), better steel, and likely something that makes cutting much nicer if your victorinox is anything like mine (dulls fast but that's due to the steel type).
I am considering one of these but I've already got 3-4 chef knives that I sharpen myself. Great buy at $50, doesn't hurt to have a second in the arsenal in your case.
That full bolster makes the knife difficult to sharpen so I wouldn't buy this for anyone who would use it daily.
Agreed. I have the 5.5" prep knife and 4" paring from this series and they're great for my wife, who finds carbon steel knives too fussy. But I've stayed away from the larger knives due to the full bolster. Not my preference.
what is the ranking of the series? they have too many damn knives.
Go for the pro if you can find a good deal. Same steel but much better to hold and sharpen. This is a great knife for $50, so buy if you don't worry about those things.
