Imagine you were going Camping and you knew an area only had decent coverage from one of ATT, Verizon, TMobile.
You could get an eSim for the Trip so you could swap to the Provider that had coverage there. Clearly if your home/work had poor coverage, you would switch. However, you may want a temporary eSim if you know you will be going someplace for an extended time where you current provider had little or no coverage.

Maybe you have some work from home job where you are always calling people from your cell, but if you block your number they never pick up? You could use an Esim and change it out every few months and never give your real number. (My Wife as a Nurse often has to call patients on bad weather days from home to tell folks we are closed. She is always in a catch-22. If she blocks, they don't answer. If they answer...they get her number. Presumably if this was something regular, she would have some better solution...they just don't because its a 1-2 times a year thing where we live....) But it gives you the idea.....

This is a really good deal for travelers or disposable numbers, their esim activation is through QR code, which make it super convenience for travelers.
Lyca/Mint/Ultra are among the lowest tiers mvno for t-mobile, they always have promotions to lure customers to sign up with them, and make it super hard for you to leave them. Not a smart practice, and that why they will always the lowest tiers companies.
If you know what you get into, STOP the bitching, lol. cheap = shitty service, what do you expect.
