Reg Pro 8 qt $120 deal is what I would choose if I needed to replace my 4 year old 1st gen "Pro" aka Duo Evo Plus 6 qt. used every day for four years w zero issues.
I notice that the the Pro non-plus does not have the canning feature. if the pro non-plus had the canning feature I would definitely get it instead.
Edit: on second thought I am taking your advice and getting the 8qt pro-non plus. I will probably not use the canning feature.

I.P. MAX was the first to have the touch screen and the electrically controlled pressure release lid. The advantage was being able to select natural, instant or pulsed pressure release once the p.c. cycle was complete same as PRO PLUS.. Handy for roasts and delicate foods to allow unattended cooking. Like all I.P. the electrically controlled pressure release models switch to keep warm after the p.c. cycle. Digital dial-in precise temperature selection and display with improved sensors for the non-p.c. functions like Keep Warm is common to these models. But MAX was lacking in other areas which was resolved with EVO models like PRO..
DUO EVO PLUS which is essentially the non-plus PRO introduced the EVO inner pot with insulated handles suitable for use on all stoves including induction.
Many advantages to EVO inner pot included with PRO and PRO PLUS. Can bring 4-6 quarts of soup or both to boil in minutes with a conventional or induction stove then safely and easily transfer to I.P. without gloves where pressure will be obtained almost instantly as opposed to having to wait a long time for the 1200 watt I.P. heater to reach pressure. . It is also easier to saute on the stove while keeping the I.P. clean. Extends the life of I.P. internal heater because it has to do less work.
EVO Digital temp control allows you to dial in a precise temperature for most non-p.c modes. My first gen EVO , DUO EVO PLUS dials in from 77F to 194F with high accuracy for non-pressure cook modes.
IMPROVED LID: EVO lid on PRO and PRO PLUS seals better and allows safe steam release to prevent burns. The manual version like PRO non-plus is now appearing on some non-evo models but those still lack the improved inner pot and digital temperature control.
Wifi control or phone app recipes is for the new-to-I.P. user and offers no real advantage that I can see.
PRO PLUS LID: Electrically controlled steam release programmable for instant, pulsed or natural steam release. Mainly for unattended cooking of foods which require instant or pulsed steam release after the p.c. cycle completes. I just shorten the p.c. cook time for delicate foods to allow for the cooking which continues after p.c. cycle during natural pressure release.
There are a few 1 star Amz reviews reporting failure on the PRO PLUS lid to unlock. So there is a slight risk that you can't get your food out compared with manual unlocking non-plus PRO. $99 was the lowest price ever for PRO PLUS 8 qt and it could it could come back for a few hours..
8 qt vs 6 qt.: 95% of my cooking is with the pot-in-pot pressure cook method. With this method only one cup of water goes in the main pot to create steam so there is never any cleaning of I.P. required and no chance of food burning or cooking stopped due to burn error from burned food stuck on the bottom of the main inner pot. This would be mainly from starchy foods. But hard to fit more than a 2L accessory pot in the 6 qt. Also keep in mind that max fill level in the 6 quart is only 4 quarts. When pressure cooking a whole chicken in the 6 qt, w/o pot in pot of course, it is a very tight fit for a 4.5 lb chicken. 6 qt is best for 1-2 people or if counter space is limited. The 6 qt size is easier to handle if you must put it away in the cabinet after use.
