My current plan phone plan from the Edge expires on Jan. 2. Do you know how I would access the account after that? It currently requires me to input a code from a text to that phone in order to login. Come Jan 2, that line won't work anymore but I will have my tablet for a few days more, and then this new phone.
Also, since this phone is a deal because I have another line, will I be obligated to keep paying for the other line for longer?

That's the tricky part, as long as your account is still active. You can put orders for additional lines, and when they are delivered, as long as your account is still active, you can activate those addtional devices. But if you don't pay and if you try to activate your new device after Jan 2, it will fail to activate.
So you have to activate your new devices before Jan 2 to make sure they will be unlocked in the future. You can activate them before they are delivered as long as they are shipped out.

"Just popped in my Tmobile postpaid sim into a Razr 2024 and no go, the phone says "for emergencies only". I did connect to data for a couple of minutes to check the device unlock status and it says 180 days and some other verbiage"
If this phone worked with tmobile I would definitely do this deal. But I'm happy with the Edge

In this case, since the razr support dual sim, actually you can do this:
0. Suppose you activated your razr with esim which is using imei2 of razr
1. Switch your old number to razr imei1 with your old physical sim.
That's it, you can just disable your razr esim if you don't plan to use your new number.
