Regarding PayPal, the cashback option doesn't seem to be available anymore. Wondering if it would have worked though since gift cards are usually excluded from cashback.

PayPal regularly lets you combine the 5% restaurant cashback with ongoing offers such as 20% cashback on Uber, 10% cashback on Starbucks and 10-15% cashback on DoorDash and those offers are regularly available - you just have to tap on the offer to add it (before you make the purchase)
The 20% for Uber and the 10% for DoorDash are combined with the 5% (that they give you on restaurants) for a combined total of 25% for Uber and 15% for DoorDash - it even verifies what the total amount will be once your payment has posted (as 25% and 15%)
obviously 15% through a credit card is a better deal than 15% through the PayPal method, but the 25% for Uber is one of the best I've seen, definitely look into it. Also, getting 10% back on Starbucks is unbeatable, I regularly reload my Starbucks account for $100 (using my PayPal debit via Apple Pay) and get 10% cash back every time I reload it.
I used to have an American Express credit card and every time I made a purchase at Staples using my Delta AMEX, it would show exactly what I bought at Staples - the name and brand of each item, the amount that each item cost, etc. (for every purchase that I made at Staples)
They probably have access to that kind of information for many other retailers as well, but my guess is that at a minimum (especially regarding the high fraud that some retailers like Best Buy have) my guess is that they can see whether or not you bought a gift card (or something else) and probably have a lot more information than just that.
and that was years ago, I had an AMEX around 2014-2017 - so they probably have access to a lot more information than just that nowadays
Either pay in the app with GC + CC to use it up or make a regular purchase at the restaurant and use multiple GCs at the register
