That's incorrect. DRAM has little effect on an SSD's lifetime/endurance.

When used in a system with HMB, the speed differences only really show up when reading and writing large amounts of files.

That's incorrect. DRAM cache can have a major effect on an SSD's lifetime/endurance.

HMB is just system memory and is inherently slower than onboard cache. This also means that there's less system memory for doing other things.

HMB is not guaranteed, and most drives use it primarily for caching the mapping tables, not write data. This means lower write efficiency.

While HMB is better than nothing, onboard DRAM cache is much better than HMB.

I ordered the Lexar 1TB NM790 from Amazon a couple days ago. Apparently that has DRAM cache.

But the transfer speeds are still pretty high (7400MB/s read transfer, up to 6500MB/s write).

it will melt in your PS5 without a heat sink. add a heat sink. Since you asked if it would work, I assume you don't know. Any NVMe in a PS5 will do not well without a heat sink.
