The protein is a protein blend that changes for each one that contain different amounts of whey protein concentrate, whey protein isolate, milk protein isolate, and soy protein.
Chocolate Deluxe seems to be the only one that avoids soy protein, but it says it contains soy on the warning. I'm guessing that is the soy lecithin.
I have had a bunch of this brand before and they are on the denser side. Like a fudge with a slight chalky taste that protein supplements often have. I don't mind them, but I prefer Quest bars. I remember Lemon Cake and Churro being less dense with more of a flaky crisp middle if you prefer that style.
