Setting aside the plastic concerns, this is an incredible way to make perfect steaks, chicken breasts, pork tenderloin, salmon, etc. The very precise temperature control allows you cook thick cuts to a perfect temperature throughout. A quick sear at the end and you've got some amazing food. One of the best things is the flexibility because true timing window to having something perfectly cooked expands greatly.

Downsides are the time and space involved and the plastic bags, which are generally regarded as safe due to the low temps. But for some folks, no plastic is safe. There are silicone bag alternatives, but they leave a lot to be desired. Glass isn't ideal, but some people use it.

I can't speak to this particular immersion heater, but this is a good price if you want to experiment with it. I'm

Another cool thing is that you can pasteurize eggs to use in their "raw" form as some recipes call for while reducing the risk of food-borne illness.

I also wanted to add that this is only 800W which is at the low end for this type of device. Most models are in the 1000-1100 watt range. It won't make a ton of difference, it will just be slower getting up to the initial temperature and returning after adding the food. Not a huge deal, but something to keep in mind, especially if cooking from frozen.

Great way to cook meats primarily. Get one 👍 You can use this in anything that holds water and at least 5 inches tall. I use in a deep stock pot.

I got this Instapot since the leader in the space, Anova, is way more expensive. The Instapot worked great then broke within 2 months. Got the $49.99 Vpcok Direct from Amazon and been working great for the last 9 months. Only issue is the temp is lower by 2.4 degrees per 2 separate thermometers so I adjust higher. Finally did get an Anova when they had a 50% off sale but I still prefer the Vpcok Direct.

As for Sous Vide, it's an energy efficient way of cooking cheap though meat like Chuck steak for 36 hours to soften it up and it doesn't leave an odor like a crock pot or pressure cooker. Sous Vide is the best way I cook chicken breast to keep it soft and juicy. And you can leave the house without having to worry about burning whereas I would never leave home with something cooking in the oven or stove top.

One more thing to call out anova now has their Wi-Fi and Bluetooth features behind a paywall found that out the hard way a month ago.

Also this is an ideal way to reheat smoked meats. I try to cook extra and then vacuum seal the protein and freeze it.

Nope. Just use a regular freezer bag and the archimedes principle. Put the food in the bag, zip it shut all except for about one inch. Lower the bag into the water and it will push the air out. When the open section is just above the surface of the water, finishing closing it.

Most of the air es removed and you are good to go.

Just fill it with hot water from your faucet, and you'll be at temp in no time.

sorry for the naivete as I don't cook often, but won't the average plastic freezer bags melt in hot water?? I think you'd need to get the heat resistant ones speciifcally for this method

Regular freezer bags work fine. Most of your sous vide cooking is done at relatively low temperatures, between 130 and 160 F (54-71C). Most polyethylene and polypropylene bags are considered food safe up to 195 F. Very long cooks (24+ hours) at higher temps can cause the seals to fail, but the average cook of 2-4 hours is fine.

If you look at box of Ziploc freezer bags, you'll see they say "microwave safe" on them. Although there is a warning that you can melt the bag if you overheat the food.

Ziploc freezer bags are sufficient.

I cooked the turkey legs using this method this year and last. It works perfectly. My preference is vacuum bags. No requirement though as that's preference and just adds cost.
