Not too shabby if you go Intel and have a motherboard already. But, do note that if you are building new and want something at the same price/performance AMD probably has the better future support and upgrade options in this price range. Example: the Ryzen 7500f from aliexpress can be had for ~$130 and, obviously those motherboards will support newer cpu versions.

Pretty good deal if you need a new CPU!

If you're ok with an OEM / tray CPU, there's an eBay seller that has "open box" Intel i5-14600 CPUs for $159 shipped (the 14600 was never actually available at retail). Had to put the deal up in Marketplace Deals instead of the standard Hot Deals due to slickdeals rules on eBay listings:

Yes, also just toa dd to this, if you're building a server that'll run plex, go with a 12600k for $150 on amazon. Plex just behaves better with intel

Just to clarify, it's not so much that Intel processors "behave" better, but rather that the ones that have built in GPUs have the QuickSync encoder built in.

If you were to purchase the Intel processor in the OP, which doesn't have a GPU built in (designated by the "F"), it wouldn't be ideal for Plex.

With that said, Plex encoding isn't mandatory if you're only watching content around your house. Where it helps most these days is when you're remote and bandwidth is limited.
