Baskets themselves are Teflon coated, the crisper plates are ceramic coated. Crisper plates developed weird pitting and flaking for us after less than a year of use, if I bought a other ninja I'd definitely do so from Costco again for their return policy. I returned ours and bought an 8 quart single basket gourmia for now. Can always add a second appliance if I feel I need more and still a lot cheaper than the ninja
