Many of us have unlocked ST/TW/TF models at 60 days with only the original 30 days of paid service.
Just read any of the TF/TW/ST threads on SD in the past 3 years, you'll find plenty of actual users confirming unlock procedure.
Do your research. CS is very poorly trained & often just reads from a manual or script, they know less than most users.
FYI - my 13 unlocked just now, a day earlier than txt message said - with only the original purchased 30 day plan.

So to be clear, if I buy this and go thru 2 months of service, then cancel that service, I have an unlocked phone that can use any SIM?

I would like to know this as well. It is not mentioned in this post and this forum is huge given the history of these kind of deals. Number port ins are usually given better deals, so I would like to recycle through different carriers until it is exhausted.
To unlock, do I let the number go inactive (sockdrawer my phone) with SIM/eSIM after the month of service? Or Can I transfer the number to Metro/Cricket/Total to avail their deals as well?

I had every SE since the beginning until I got a 12 2 years ago. And I was big time Touch ID. Hated the idea of Face ID because I knew people with the X and XS who had to do stupid smiles just to make the thing unlock.
The 12 and on fixed that. It's shockingly good. It's so good it's actually faster than Touch ID. I couldn't believe it. Everyone I know who struggled with Touch ID I tell them to get a more modern iPhone because it's worth it.
But this was also the clincher for me. SE battery life is horrendous. And the standard iPhone 12 even had more than double the battery life of any SE model. And the 13,14,15,16 has better battery life than the 12. When you enable dark mode. It's super crazy energy efficient.
I went from having to fully charge my phone 2-3 times a day to never. Or once a day at night.
