After I open it, I transfer to smaller jars like salsa jars that I've saved. Easier to store in the back of the fridge and less headspace so slows the oxidation. If you have more room in your freezer, you can put them in there. It won't freeze, but it will extend the life even more.

I have an extra large extra hot version of this, but I am tempted, since we use it on chicken wings on a regular basis... but 1 gallon, its going to take a fairly large amount in my fridge (to extend its life) until its gone...
