The difference between the Inherent Stability model and a traditional shoe is that the former can accommodate a broad cross section of runners from neutral to overpronators to supinators. By contrast, a traditional support shoe is potentially injurious to a person with neutral foot biomechanics.
I'm glad you mentioned the Arahi. HOKA's Gaviota and Arahi series both used to fall in the nebulous category of traditional stability shoe. For the first few versions of both shoes HOKA designers opted for a dual-density midsole scheme. A denser foam was used along the rear of the foot and wrapping up along the medial arch. HOKA marketing called this intervention 'J-Frame' because it resembled that letter's shape when looking at the sole of the shoe. In a recognition that the market and lab research has moved away from traditional dual density interventions HOKA switched to a single density midsole for the Arahi and Gaviota.
