FWIW, RAM in most of these laptops will not be upgradable. Keep that in mind before buying thinking you can upgrade it easily.

Does the MT use proprietary power supply? Would love to get 1 for my 10 yr old to play some games so I'll need to replace the psu and add a midrange card.

Not sure if proprietary but per dell:
It is fine to upgrade to the 500w psu which will then enable you to install modern discrete gpu such as RTX 3070 in 7000 tower.

Dell has validated these gpu per 7000 tech sheet

NVIDIA® GeForce® RTX 3070, 8GB GDDR6 (optional)
AMD RadeonTM RX640, 4GB GDDR5 (optional)

AMD RadeonTM 550, 2GB GDDR5 (optional)

AMD RadeonTM 540, 1GB GDDR5 (optional)

Dell has validated these oem psu specifically for 7000 tower

240W internal power supply unit (PSU), 85% Efficient, 80 Plus Bronze
260W internal power supply unit (PSU), 85% Efficient, 80 Plus Bronze
400W internal power supply unit (PSU), 92% Efficient, 80 Plus Platinum
500W internal power supply unit (PSU), 92% Efficient, 80 Plus Platinum

Snagged a 10 core 32GB laptop for about $100 after the deal and the Amex credit. Was looking at a server or a workstation but the specs were pretty rough.

The detachable tablet laptop was also a decent option but again specs didn't seem to make too much sense for longevity

Heads-up -- Most of the laptops come with Windows 10 and Microsoft is ending support for Win10. You might want to buy one without an operating system to maybe save some $ or factor in the price for upgrading the operating system to Win11 in laptops that come with Win10.

Laptops Intel gen8 and on can upgrade to win11 for free. Older gens may be able to also with some finagling

please correct me if I'm wrong

It can probably handle an 8GB 4060 (non-ti or non-OC) which only pulls 110 to 120 watts under load. Openbox is around $225 sometimes on Zotac's site. It's much more efficient.

If you create a bootable Windows 11 installer via Windows Media Creation Tool it will install on these Dells that have a Windows 10 license in the BIOS/motherboard unless it says "no OS". You'll want to do a fresh install anyways.
