It works everywhere, like a normal card. I have been using it for a few months now.
The catch is this virtual card option is intended for single use, and Google x Discover have to verify and greenlight it every time you use one, so you can't save it for future purchases or recurring subscriptions as it may break (or may not, but it may break).
For example: Amazon usually charges you when they ship. You purchase 2 items in the same order, one shipped 3 days from now, the other 4 days from now. The item 3 days from now will likely go through, but Amazon may send you an email regarding payment declined for the item 4 days from now.
I tried specifically this with Chrome and for some reason I just can't get it to generate my a card or prompt for auto-fill. I can only get Chrome to do anything at all if there's a specific Google Pay button.
Good to know it's not actually working properly for me.
I got it to work. It turns out that despite the card being added in Autofill > Payment methods, without sync explicitly enabled it will not actually prompt to create the card. Thank you for letting me know it was not working properly. Post corrected.
