(Yet there are people who don't RTFM, proceed to paint the inside of their fireplaces, then leave bad reviews with pictures when the stuff flakes off. Can't fix stupid.)
They're specified for applications like the exterior of grills and stoves; for appearances, not function.
The two 1200F High Heat (flat) and High Heat Ultra (semi-gloss) paints don't specify curing in the data sheets. The spray versions are multi-coat, while the brush on versions are single coat.
The 2000F High Heat Automotive paint does require three separate baking processes to cure.
If in doubt, consult the data sheets.
Replacement grates are probably the best option, if available. Fancy high heat coatings that can stand up to heat, flames, and more demanding applications aren't cheap.
Side note,
"heat cured" for anyone wanting the common term, as annealing is specific to metal and glass.
