I don't think it's much of a health risk unless you sand off the ceramic surface and cook directly on the aluminum surface below.

Im just personally kinda burnt out on ceramic pans because they all never last.

Even the All-Clad are junk. No matter what you use; stainless, cast iron, ceramic or other... they all require a gallon of oil or lard to keep from sticking. Yes, at med to low temperatures.

Try a proper and well made(ie not cheap) carbon steel pan. Yes they need to be taken care of similar to cast iron, but they require very little oil to not stick compared to stainless and cast iron in my findings.
