Just a tip. If you have a Sam's membership, there's a much better product/option. Buy a bag of the Belgioso All Natural Shaved Salad Blend (Asiago/Parmesan/Romano) $9.44 ($5.39/lb). It's a little more than this deal per lb, but well worth it. https://www.samsclub.com/p/shaved...od20930771
Then just take a food processor and grate up as much as you like. You'll have a superior grated cheese for Italian dishes. Put the excess in a shaker, and it keeps amazingly well, no cellulose or anything artificial added. Plus, I like having control of how finely I grate it. If you want it really fresh and pungent, don't pre-process it, just blend it up in a mini chopper when you need some freshly grated cheese. Personally, I like having a shaker ready to use. It's also amazingly tasty just eating it shaved.

I've gotten this before and I don't know if I just got a bad batch, but it was basically flavorless. I've sort of gotten used to a number of Amazon Brand alternatives being significantly blander than a name brand version.

Just got 24 oz. of Kraft parm for $4.49 on sale at Costco yesterday, need to drive to the store and whatnot but it's another option at a better price.

This is what I do it's worth it as it actually has the flavor you expect with a good shelf life. Though if you're willing to do the work AND have a food processor getting any shaved Italian cheese and using the method jene mentioned will give you a better end result though the shelf life won't be close to the same because it doesn't have the drying agent / isn't as dry (everything has a trade off and shaved will always be better quality especially if you do it yourself from a block for those really interested in putting some effort into it 😂).

I have to disagree. At first, I wasn't sure so I didn't respond to this immediately, but after waiting and testing I can state unequivocally that the shelf life of home grated Belgioso (Asiago/Parmesan/Romano) shaved cheese is just as long as pre-grated shelf-stable stuff. The Belgioso shaved cheese is actually pretty dry as there appears to a lot of rind shavings in the mix, consequently, it just doesn't go bad (not after over two months anyway). Also, as you mentioned, the Sam's Club Belgioso Shaved Salad Blend doesn't have anti-caking agents like cellulose (wood pulp) or preservatives, the pre-grated bottled stuff does.

I stored a container of food processor grated Belgioso for over two months without a hint of mold or going bad. It also retained its pungency and flavor. The bottom line, people shouldn't worry about shelf life of this cheese. It's easily as long as the expiration on the bag, and I'm telling you now, it's still good even longer than that. Try it and you'll see. Besides, you can grind as much or as little as you need, but if you are able to go through the 1.75 lb bag of shaved cheese, there's no reason not to grind some (or all of it). Personally, I find it a lot more convenient grated, but I usually only grate 1/4 to 1/2 a bag at a time. When you freshly grate it, flavor and aroma is released, like when you grind whole bean coffee at home.

It's so easy to do, once you start grating it yourself with your Cuisinart, you'll use it more often and won't go back to bottled grated cheese.
