Use an aluminum roasting pan. It's what I use to cover food for steaming on the griddle. It then doubles as holding your food when you're ready to remove food from the griddle. Reusable if you wash it afterwards. I reuse mine. To lift it off the griddle put your spatula under the pan and lift .

Or buy a set of magnetic knobs then use any steel pan you already have. It'll store better since knob easily removed, therefore no bump.
