I always thought basting meant actively brushing something on top of something to make it more moist. This appears to simply be a lid, if I'm not mistaken.

I don't see why it would not work. I was thinking the same thing also.
but only if you have a big grill 22" or larger. other wise you can just close the lid on your grill

On the flat top you can squirt a bit a water next to what you want to steam (freshly tossed cheese on a burger for example) and put the basting cover on so the steam can melt/moisten what you want faster. Similar to Staub's dutch oven cover that have the drip nubs so the condensation will drop back down and "self-baste" the item being cooked.

Similar to what is used by the hibachi chefs and the quick Japanese teriyaki places at the malls

Blackstone explicitly says not to close the lid on your griddle. That isn't what the lid is for. I even emailed them, they said no.
These are used to trap steam. I guess you can think of it as a hot zone, but I don't think the griddle metal itself gets extra hot; you're creating a very moist hot convection air environment under the dome.
On a gas stove:
I cook sunny-side-up eggs in a pan, take off heat, let it sit for 1 minute with a pan lid on.
An example of no extra heat added, just a closed environment that cooks the top and firms up the eggs.
We picked this up, nice heavy steel. We have a couple of smaller, thinner metal domes; they can just be used on a single burger each.
This is a bigger can that can be used for rice and vegetables.
For the price, this is a good deal.

It's used to trap moisture and convection heat under the dome. Very useful for vegetables or rice. It stops the items from drying out.

Adding a squirt of water is common to add to the moisture, then cover.

This is worth getting, especially when cooking other items alongside your vegetables, rice, like meat.

I bought this off a previous fo deal. I haven't used it yet but it seems sturdy and well built. Definitely a value at this price if you think you'd use it
