I use one of these as my main Proxmox host and it runs 24x7 without issues (with 64gb/4tb nvme/4tb sata), got my parents ones for their main desktops and they have not had any issues either. Paid $299 for the barebones version so not a bad deal if you only need 16gb/512gb

I really want to do this but I'm torn by the lack of expandability. Can I run Frigate and Plex on this one machine?

Probably want to get a big hard drive for either of those but Plex shouldn't be an issue at all.. as for Frigate it really depends on how many cameras you have as more cameras if you are recording all the time requires higher specs

You can run plex and frigate on any modern $300 machine. It is just a matter of compromises and trade offs.
