Don't worry about sheet pans getting stained too much. That is result from oil or grease that was heated too much. It is the same process used for seasoning iron and steel cookware. But if you have rough brown and black stuff that is burned food, you need to wash that off. Slick and smooth brown oil is seasoning but over time it can look black when you accumulate enough seasoning layers. The seasoning does not stick to aluminum as well as iron, so it does tend to build up and come off as the pan is used.
Seasoning make the sheet pan less-stick, not non-stick, and the darker color makes the pan heat up faster. Could be desirable for roating vegetables, pizza, or anything you where browning is desired. But maybe reserved one or two pans to have lighter color to use when browning is undesirable like cookies.
The ones that comes with the purchase of new gas stove is very heavyand better quality but it is not completely flat surface, may drip unless you use alimonium sheets
