I would suggest you buy it at Costco. Ember's support sucks. Only way to contact them is through their Web site and it takes them forever to reply. One of the pins on my charging coaster broke and it took a month for them to send me a replacement under warranty. So I couldn't use it for a month.
problem with the color ones were people on reddit saying the color flaking off. SS would not run into those problems.
I have a white ember mug and the top edge has the white paint chipped off in one spot.
Admittedly, I bought it from the thrift store for $5 and it was like that when I got it, so I'm not exactly super upset about it. It still works, and for $5 I don't care about the minor chipping. But I can confirm the paint seems to flake off.

I'd say the sage green color is worth the extra $25. For me anyway.
I've had the stainless steel version for about six months and love it. My kitchen is green. Since I leave this on the counter in the charger when not in use, I would love the sage green.
I have 2 of these, both turned into e-waste within a year. To take this apart and replace the dead battery is insanely difficult and the app constantly crashes on my iPhone 13. I'd recommend anyone get a dumb cup warmer for your desk instead

Last one I got from Costco was sage green for $80
