I'm on the market for a carbon steel pan and OXO is a pretty reputable brand. However, the NYT Wirecutter recommended the Tramontina pan (no mention of OXO), so I'm a bit conflicted... Anyone here have experience with either / both?

I recently bought this in the larger model (12".) it is a thinner pan and no designed for seating meats, but it's wonderful for lightweight duty: eggs, fish, veg. I made Brussel sprouts in ours last night.

Might seem unintuitive to have a CS pan that isn't good for searing meat, but its great because it's a nonstick with great heat retention but it's super light, almost like an aluminum pan, so it's easy to manipulate, clean, etc.

I recommend it.

I bought this one recently and would recommend - it's perfectly flat on the bottom, doesn't warp with high heat, and has a good enough coating from the factory to just wash, oil, and use. (i.e. I didn't go through a cast iron prep process, I just started using it) I bought the 10 inch pan. https://www.amazon.com/dp/B0B4SN2...title&th=1
It's perfectly good for searing a steak as well.

Almost every Oxo kitchen item I have ever purchased has broken.

Typically their materials are nice though.

I got the Merten and Storck deal a couple weeks ago. $28 for 12"

Wait for another M&S pan deal, wash with soapy water, add initial extra seasoning of avocado oil, enjoy slick pan. Wipe with paper towel to clean, another towel to apply a smear of avocado oil, ready for next time.

I'd go with Tramontina, specially if you can grab a deal on Costco. Great brand with a good price range

Indeed, I somehow mistook the Wirecutter review of the Tramontina "stainless steel" pan with this (carbon steel). So in actuality, this Oxo carbon pan IS recommended (along with some premium brands costing more). Thanks for the correction!

Eh, actually seems a bit pricey for just carbon steel, even if it is on 'sale'. If this is a top rated CS pan, it might be worth it, but I'd suggest looking some more.
Not really a comparison, but I have a de Buyer pan I picked up for like $5 2nd hand and an Ikea CS pan that I bought years ago was only $25 (on sale??)

EDIT: Just guess I'm thinking in 2010s $$. ~$40 is actually pretty normal for a CS pan it seems.

Tramontina does make a good carbon steel pan. I have the 8 inch as a daily driver. The seasoning behaves differently on the tramontina than it does on my other pans- it never seems to get damaged. Sometimes I'm doubtful if there even is a seasoning coat on the pan, but it doesn't stick and doesn't rust, so I'm happy. The thickness of the material is also a nice sweet spot for heat distribution and weight.
