I would want to upgrade ram anyway so this might be a pretty good deal for me to upgrade.

is the 16 gig of RAM sort of a slap to the face here?

No, 8 gigs of ram would be a slap in the face. 16 gigs is enough to get anyone going and gaming. Some games, mostly more modern ones or those problematic Sony Playstation ports might want you to dial back a setting or two, but no game won't run on 16gigs of system ram.

Plus, you can always just spend a little more and add 2 more sticks if you find you absolutely need it. Most folks won't, at least not yet.

No more than "three square meals a week" would be shake head

Low end gaming build in 2025 is 32GB RAM (2 x 16GB). I'd suggest 64GB (2 x 32GB) as a reasonable build. (My builds even 5 years ago were all 64GB of RAM or higher.) Do not do 4x DIMMs when you can do 2x DIMMs instead (significant perf hit for gaming).

escape from tarkov, even on 1080p, dialed back needs 16. And there are others, had to upgrade the kids to 32 cause he kept having to cache nvme space as ram for vram (12gb) and dram(16gb). Would highly recommend upgrading the ram on this. otherwise fair upper tier entry level gaming setup.
