One complaint/warning is that you can get burns from the door closing on you. My trick is to pull the tray half-way out to make sure it's in the way of the door. Just a warning, not an issue really.

Dehydration is simply set to convection and a low temperature (typically around 135°F or 57°C) to remove moisture from food. You can manually set that. The issue you would encounter is it max setting is 60 minutes so you will have to manually set more time.
