A 7 speed at this weight should be good for most beginner to intermediate players right?

Yes.

I like my 6-9 speeds 164g or so and distance drivers about 158g.

Lighter is easier to throw with the spin you need. And throw correctly a couple of grams doesn't make a material difference in the wind or anything. You want heavier as you get into touchier midranges and putters to give more feedback for lower power throws.
