I moved from the Ring to Blink a couple years ago for this exact reason and have been happy with the change. Blink has a hub module that can hold a micro SD and does not require a subscription. It's on sale for $35 right now too.

With the Eufy the model I have has the module with the SD card and it rings it can also rin on your phone and Alexa will tell you when someone is at the door a Show will bring up the video feed. Eufy has models that run on the doorbell transformer as well as battery. For the doorbell transformer they can be finnicky he TAPO one works OK but if I recall does not have the range of doorbells.

Reolink also has a video doorbell with local storage
