Not looking for creative purposes but need to power a Samsung G9 and a 4k monitor at the same time. Wondering if it's worth going last gen or wait for a deal on a current workstation.

Yes, it can drive those two monitors at the same time, one using the HDMI 2.1 port and another using one of the TB4 Type-C ports. If your monitor does not have a Type-C input, get a Type-C to DP or Type-C to HDMI adapter, depending on your monitor's input.
Edit: it looks they finally can do it. Limited to some HPs, ThinkPads and Razer. Supplemental controller attached to PCI bus, so possibly not as robust as Intel native (speculating)

I have one of these plugged into a thunderbolt 4 hub powering two 1440p monitors and an external SSD directly connected to the hub, as well as a bunch of USB devices connected via the monitors. I'm not sure how much more "robust" native would be, but it's been working great for me.
