Great pan. I have an older one and it is great for lots of things. The smaller ones are nice for crepes. Not as nice as carbon steel but not bad!

Kenji seems to recommend against seasoning using flaxseed oil. Is it an issue if it comes preseasoned with it but you don't use it in the future?

No. You could just run this through a self-clean in your oven and re-season immediately if you would like.

There is absolutely nothing wrong with seasoning a pan with Flaxseed oil, however the process is a little trickier as more can go wrong, but the correct finished result is really good.

Due to its nature, I wouldn't use it on carbon steel as it is prone to flaking/chunking off more easily there, but applied correctly on cast iron it is a solid choice.

Chiropractor do not have a science degree. They are experts at cracking your knuckles! Every actual SCIENTIFIC STUDY has shown that seed oils are not bad for you. Multiple studies in multiple countries by multiple organizations have proven that seed oils REDUCE inflamation in a human body. Butter beef talo and lard all cause inflamation. They caused inflamation in every single study with absolutly not grey area! SEED OILS ARE NOT BAD FOR YOU! SCIENCE HAS PROVEN THAT AND A CHIROPRACTOR WITH A DOCTORATE DOES NOT HAVE A MEDICAL OR A SCIENCE DEGREE AND DOES NOT KNOW WHAT THEY ARE TALKING ABOUT. Sorry about the capitals I couldn't find my crayons.

I don't care about seed oils bad for you angle. It's polymerized.

The reason it sucks for seasoning is smoke point of flaxseed oil is just 225F. That is ridiculously low. I assume manufacturers do it for cost reasons. It will flake off if you do a lot of high heat cooking, like searing steak.

Compare that smoke point to refined avocado oil's smoke point of 520F. I personally use Crisco shortening for seasoning (smoke point 440F) as a cheap alternative.

They are both well known quacks. In fact Eric Berg is not even an MD, but he loves to pretend to be one. Neither of these folks practice medicine. They are full time YouTube influencers and supplement salesmen. If you are taking nutrition advice from these salesmen, you are far off course.

Flaxseed oil season would flask so easy after a year or 2. Nothing can stop it.
