Does anyone have a recommendation for an HDMI switch that does 1 in and 2 out - i.e. switch between two displays?

then you dont call it a switch. if you dont want to see the display on that 2nd monitor/tv, just dont select that input or turn it off. in this case. its safe to look for an hdmi "splitter".

I actually have a splitter, but when I have it plugged into both my monitor and a TV - my PC still "sees" them both even when one of them isn't on. Maybe it's just a bad splitter? That's why I thought a 1 in 2 out toggle could be a solution.

Lol - Anker actually calls it splitter in their Manual (https://m.media-amazon.com/images...3vDeDL.pdf) That's probably why original listing used this in the title.
(Still not a splitter tho)

A random internet search disagrees with your definition of what is a HDMI "switch".
