Pretty sure these can be used without the app and via Bluetooth for manual operation. App has control features that I rarely ever used with my other Anova cookers. As to the microplastics comment, sous vide is done in bags so the cooker isn't the plastic source nearly as much as the bags, which have some risk at high temps that usually aren't the purpose of sous vide prepared foods. Silicone bags can be used if additional protection is needed. If I didn't already have more than one sous vide cooker, I'd be all right with buying this at this price.

i think the Mini does not have manual controls (temp. screen etc) and after pairing with phone, everything else is done through the app - so i doubt the "without the app" part

100% skip this one due to no on-device controls. I have the original and the Nano and they're great but no way do I want my device to die because app is discontinued.

I dunno if the BT has been hacked for this one. I had an app for the OG that had some cool features bypassing the Avova app. My temp wheel is forever purple.
