Replacement filter cost and ease of use is the deal with these countertops. The Aquatru and others have the glass pitcher/carafe filtration system that works well. Just get a bunch of pitchers, and stick them in the fridge. All your water is cold and clean. The ones like this that just crap out warm water isn't the best way to go.
As far as contact with plastic, every reverse osmosis countertop has a plastic filter. You aren't getting away from it. Perhaps some undercounter inline filters are all metal, but it doesn't matter unless you own a house.
