CO2 dissolved in water creates carbonic acid. This changes the perceived taste of the beverage. Once it goes flat, the acid is gone and the taste is not the same. I try not to buy any carbonated beverages in plastic bottles, as the carbonation is usually weak. When I do, I just put them in a Sodastream bottle and add more CO2 back in.
