What does the plug on this do. Given the device has 120V outlets on it, I'm unclear as to why the plug is so big. Is the cable carrying anything other than 120V?

Not sure but I am guessing that its a transformer with a pass through of AC current as well.
The charging unit on this device is smaller than similar Anker products. It looks like they must have made the transformer external.
Its a great price on this device. I am just not sure how practical it is as a travel charger. (Anker actually says that it isnt for travel).

I can't justify paying this much, but I do like the features of individual USB and outlet control through the app, and the power output information screen. I added it to my Amazon wish list, maybe my rich brother-in-law will buy it for me for Christmas.

that actually makes a lot of sense. but they could at least say it is not for cruise rather than not safe to travel.
that said, as owner as OG 100W and 140W version of this, i wouldn't want to travel with a brick adapter. you cannot securely attach brick adapter on airplane socket, and use in hotel rooms will highly subject to the width of the office area you have, especially if you have to put a universal adapter at the tip.
If you need this particular combination of features, it's extremely convenient. The external transformer is admittedly heavy, but since this comes in two separate pieces, the weight is easier to distribute in luggage.
This model won't suit everyone, but for me, it's been ideal for travel. I use it with a portable CPAP plugged into one of the top outlets, while the front USB‑C ports let me charge multiple devices—including several laptops—at the same time. I've also made use of the side USB‑A ports when others needed to charge their gear. It's compact, powerful, and packed with functionality.
And yes, I actually use em dashes lol

Bought this last time it was on sale. The form factor of the charger itself is great. Seeing the power consumption on the screen is great. App is useless, it's just another step. The power brick is comically large! Larger than the charging unit itself. I'd still recommend it if you can handle the large plug. Edited to add: use it as a home docking station, not the best choice for travel, just too large.

You combine the main module and the wall wort attached to the cable and I'm comfortable mine does. Together it's pretty heavy.

Pretty good charger that gets hot but doesn't thermal throttle. Has some weird negotiation issues with multi-port usage. High idle power usage.
