This coconut milk is fine, but doesn't work well for Thai curries. The emulsifier(guar gum) keeps it smooth but for curries it's best to fry the curry paste in the thick cream at the top of the can.My go-to is Mae Ploy coconut cream, I have found it at Walmart. Just thought I'd mention for anyone looking to make Thai curry 😊

My favorite is Panang, it is so extraordinarily easy to make. Once you have the few harder to get ingredients like Makrut lime leaves and palm sugar it's like a 20 minute meal.

I've definitely used this and similar products with guar gum in curries and haven't had any issues. Why do you say it doesn't work well in a curry? Other than not being able to fry the curry paste in the thick cream, which I've never done.
