Found a few of the PNY PRO Elite 1TB MicroSDXC cards in the clearance section at a local Staples for $47.46 (compared to $67.99 for the exact same item on Amazon)

which means most place where you are using the build in card reader, it cannot go above the 104MB/s.
if you need higher speed, instead of looking for a faster UHS card, look for UHS2 card. most laptop reader actually support UHS2 cards.

Edit: Kind of. In the end, if you use a reader with this everything you said is bad advice. If you're using a Wyze camera with an SD card slot, no biggie. But in general, especially for things like an Osmo Pocket 3, this is too slow for 4k/60fps shooting and won't work.

For the DJI Pocket specifically, Ali Griffin's site has benchmarks for different cards:

In all test cases, the Pocket can't exceed ~70MB/s write speed. Interestingly, the PNY Pro Elite U3 scored around 70MB/s, which is essentially the same as the best Samsung cards tested.
if you doing mostly video, the video spec of the UHS card (e.g. V30/V60/V90) provide sustained write speed rated for the card. even the premium V90 card doesn't exceed UHS bus speed of 104 MB/s. echo back to my original statement: unless you use a none SD UHS spec reader, you cannot benefit from the higher maximum write / read speed.
It stands to reason that a higher advertised speeds card might indicate better sustained performance when there is no other labels available to check the performance, and i think that's exactly why most fall into that marketing strategy.
a lot of camera companies that came with dual SD card slots actually share the available SD card bus speed. for example. my panasonic G9 camera won't ever exceed 52MB/s on UHS 1 card (half of the UHS 1 bus) no matter what you put in. so you must go with UHS 2 card to get close to V90 or V60 speed. if you doing 4k60, you might want to invest in UHS 2 card instead.
