I've never had the greatest experience with refurbished products on woot: is there any reason to believe this particular refurbished item is an exception to that rule, and why?

It's manufacturer refurbished, just being sold via Woot, and comes with a 6-month MSI warranty.

These go for $1,100 on the wholesalers. With $1,800+ I'd invest in a brand new machine with an RTX 5070 Ti. It's better, up to date, and brand new.

Stay away from MSI with a 5080. I've returned 2 to BestBuy. The 16in and then the 18in. First one CPU would overheat and bluescreen and the power brick would get to hot to touch and the second one the GPU would overheat and throttle to CPU video and turn off the 5080. Had to reboot to get the 5080 to work again. They are cheap for a reason. Stay far away.
